Potato Latkes – A Great Side Dish for your Favorite Seafood Recipe!

Sue Cullumber (TAS 2013), enjoyed Chief Steward, Margaret Coyle’s Cheese and Onion Potato Latke recipe, while aboard NOAA Ship Gordon Gunter. When Ms. Coyle was asked what skills and experiences are needed to become a Chief Steward, she said, “A person needs good cooking skills, to be organized, personable, and dedicated – this is a career. I work 24 hours a day, 7 days a week, 365 days a year. I live to cook and cook to live!” 

Cheese and Onion Potato Latke

Ingredients:

   4 cups leftover mashed seasoned potatoes

   4 large eggs, beaten

   1 ½ – 2 cups flour

   1 tablespoon baking powder

   1 to 2 cups whipping cream, half and half, or milk

   1 cup onion, minced

   ¼ cup green peppers

   1 cup cheese, shredded

Directions:

   In a mixing bowl, mix potato, flour, baking powder, onions, peppers, and cheese

   Add eggs and 1 cup of liquid

   Blend well, if too stiff add more liquid; if too thin add flour

   Batter should have the consistency of soft mashed potatoes

   Drop by ¼ cup on well-buttered griddle and cook until brown on one side

   Flip and cook until brown and cooked through

   Serve warm
